With a good balance between milk, sugar and vanilla, this couverture leaves a slightly caramelised milk taste on the palate.  It is very fluid and easy to work with. It has a high cocoa butter content.  Cocoa fat mass: 31% - Sugar: 41% - Milk Fat mass: 7%.
