Kirsch is a clear, colourless brandy traditionally crafted through the double distillation of morello cherries, a deep-hued variety of sour cherry. While its origin lies in morello cherries, modern production often involves other cherry varieties. The cherries used in its production are fully fermented, including their pits.  Unlike cherry liqueurs and brandies, kirsch is not sweet. It boasts a refined taste with subtle cherry flavours and a slight bitter-almond note derived from the cherry seeds.
